Piquillo pepper

Piquillo peppers from Lodosa are one of the main products of the Protected Geographical Indication of Navarra. The piquillo peppers are handmade in the locality of Mendavia, at the riverside of Navarra, by La Catedral de Navarra. Spanish peppers from Lodosa are elaborated with a careful selection and harvest of the pepper. It is picked up in the optimum moment of maturity. They are roasted peppers in a wood-burning oven and peeled by hand; they do not use water in this process.
