Torta del Casar Gran Tajo is a cheese elaborated in the Extremaduran town of Casar de Caceres from ewe’s raw milk. Unlike the other ewe’s cheese, the Torta del Casar is produced with a vegetable rennet (flower of thistle), this characteristic makes it a cheese suitable for vegetarians. The Torta del Casar is distinguished for its great creaminess, a soft salty taste and a subtle bitter end. To try it, we highly recommend to make a circular aperture at the top of the cheese and spread it on a toast, always at room temperature.
