Sobao Pasiego, has a traditional manufacturing process in which the butter flavor stands out. Casa Olmo is a family business dedicated to the production of typical Cantabrian products since 1908. Their long history has allowed them to perfect their recipe for sobaos pasiegos until they achieve a product with maximum tradition and flavor, but without losing the essence of the traditional sobao pasiego.
What is the sobao pasiego?
We assume that if you are here you will already know, but in case some curious person eager for information has slipped in, we are going to tell you what the sobao pasiego is. The sobaos pasiegos are that sweet that is made from a whipped dough of wheat flour, butter, sugar and egg, butter being the only fat allowed in its preparation. The sobao pasiego is a rectangular-shaped batter whose crumb is intense yellow in color and its surface has a characteristic toasted color. It has a dense, fluffy and juicy texture. In addition, it is sweet in flavor and the aroma of butter stands out.
The production and packaging area of the sobaos covered by the Protected Geographical Indication “Sobao Pasiego” is centered in the so-called Pas region, which covers the geographical area delimited by the Pas and Pisueña rivers and the area of influence of said rivers.
It was born in El Pas due to the abundance and excellent quality of its famous cow’s butter, an essential material that becomes part of its components, among which are also eggs in their highest degree of freshness and richness of assimilable materials. For this reason, the Sobao Pasiego has highly nutritious conditions and is perfectly digestible and has an exquisite flavor, in which the rich butter it contains predominates.
Why Casa Olmo?
Because Casa Olmo is a company founded in 1911 by Braulio del Olmo Madrazo to make typical products of Valle del Pas in the town of Ontaneda, on the banks of the Pas river and in the heart of the beautiful Valles Pasiegos.
It all began as a tea room in which sobaos and quesadas were made homemade in summer for consumption by families and tourists in general who came to enjoy the famous and healthy waters of the Spa in the area, as well as like those who made a small stop on the way to their vacation destination.
