Idiazabal Ondarre cheese is an artisan ewe’s cheese made in the Basque town of Segura from raw Latxa ewe’s milk.
It is a cheese of the protected designation of origin Queso Idiazabal made in an artisan way with raw milk from Latxas sheep owned by Eneko Goiburu.
Eneko Goiburu makes its cheeses only from the milk of its own sheep, being part of the Idiazabal Artzai Gazta cheese producers association.
The Ondarre cheese factory has been the winner of Ordizia Idiazabal cheese contest on two occasions in the last decade, being deserving of such an award in 2014 and in the current 2021. It has also been named best cheese in Guipuzcoa in 2020.
Idiazabal Ondarre cheese is an artisan sheep’s cheese made in the Guipuzcoan town of Segura, in the Aizkorri mountain range, from raw Latxa sheep’s milk. It is a cheese from the protected designation of origin Queso Idiazabal made in an artisanal way with raw milk from Latxas sheep and with natural rennet of animal origin, with a minimum maturation of 4 months and smoked in a traditional way. The result is a cheese with a hard, smooth paste, with a firm, pleasant flavor and a slight smokiness. These characteristics are typical of the best cheeses in the area. The sheep are owned by Eneko Goiburu, which is part of the Idiazabal Artzai Gazta cheese producers association.
