Iberian saucisson Julián del Águila, made by this prestigious company from Guijuelo with a tradition that dates back to 1895, is an authentic delight that stands out for its quality and unmatched flavor. This family business has perfected the art of charcuterie for more than a century, combining traditional methods with rigorous quality control. Julián del Águila Iberian saucisson is made from the highest quality Iberian pork. These pigs are raised freely in the pastures of the southwest of the Iberian Peninsula, where they feed on natural grasses and acorns. This diet and exercise in the field contribute to the excellent infiltration of fat into the meat, providing a juicy texture and deep flavor. The production process of Cular Iberian saucisson is artisanal and meticulous. The meat is coarsely chopped and mixed with a careful selection of natural spices, such as pepper, garlic and nutmeg. The mixture is then stuffed into natural pork casing, which allows for homogeneous curing and authentic flavor. The salchichón is slowly cured in natural dryers for several months, allowing it to develop its characteristic flavor and aroma. The result is a deep red sausage, with well-distributed fat marbling.
