Recipe: Elver Omelette.

Ingredients:

250 g of Angulas Manterola elvers
6 eggs
1 large onion
2 cloves of garlic
2 tablespoons extra virgin olive oil
Salt and pepper to taste
Instructions:

Peel and finely chop the onion and garlic cloves.
Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic and cook until golden and caramelized, about 8-10 minutes.
Meanwhile, in a large bowl, beat the eggs and season with salt and pepper to taste.
When the onion and garlic are ready, add the Angulas Manterola eels to the pan and sauté for 2-3 minutes, just to warm them up slightly.
Add the eels to the beaten eggs and mix well.
In the same pan used to cook the elvers, pour the egg and elver mixture. Cook over medium-low heat for about 5 minutes, or until the edges of the tortilla are golden brown and the top is almost set.
Using a large plate, turn the tortilla over to cook the other side. Place the pan on the plate and turn quickly. Slide the omelette back into the pan and cook for another 3-4 minutes, or until completely cooked.
Once ready, remove the tortilla from the heat and let it cool slightly before cutting it into portions.
Serve hot and enjoy this delicious elver omelette as a main dish or side dish!
