Cockles in brine 20-30 Ria de Santoña, are large cockles from the Galician Rías. The cockles, like the great majority of the molluscs, are more valued the greater its size. On this occasion, we find Galician cockles selected in auction for their size and cleaned by hand one by one to get a cockle completely clean of sand but retaining all its original flavor. Once clean, they are placed in their corresponding tin individually and accompanied by a soft brine made with water and salt.
